“Moropio” Amarone comes from the vineyards of Corvina, Corvinone, Rondinella, and Molinara located in the Classica area of Valpolicella. The Antolini estate extends over 9 hectares, divided into various plots, with terraces and dry stone walls, situated at an altitude between 150 and 300 meters above sea level. In the cultivated parcels on the hills of Marano, the vines are trained in the veronese pergola style, while those in the municipality of Negrar are trained in Guyot. The soils are composed of clay and limestone; the cool climate, with strong temperature variations, ensures ripe grapes with very aromas.intense. After the harvest, the grapes are dried for 3 to 4 months before proceeding to destemming, cold maceration for 7-10 days, and fermentation in steel with indigenous yeasts, with skin maceration lasting about 20 days. The wine rests in large oak barrels, cherry, chestnut, and mulberry for at least 24 months and completes the aging period in the bottle before being marketed.
