The Albariño ‘Coleccion’ Pazo Señorans is a Galician white wine that stands out for its aromatic fragrance and fine mineral vein. Among the wineries of Rias Baixas, Pazo Señorans is one of those that is most committed to showcasing the exceptional potential of Albariño, vinified in the most diverse versions. According to some hypotheses, this white grape variety was spread in the 12th century in Pontevedra, Galicia, by the monks of Cluny. Other theories suggest that the vine actually originated in this region of the Iberian northwest, of which it has become the symbolic grape.
Pazo Señorans ‘Colleccion’ Albariño is made from only grapes of the same name, grown on characteristic pergola systems in the Valle de Salnes, where the plants enjoy the cool oceanic climate and the subsoil rich in xabre, a granitic rock with excellent draining properties. The harvest is done by hand and subsequently the bunches are vinified in stainless steel tanks at controlled temperature. The subsequent maturation period lasts 6 months, during which the mass rests on fine lees always in steel. Once bottled, the wine spends a good 30 months in glass before being released on the market, which occurs in limited quantities.
