Driven by the desire not to waste anything from the wine production process, Denis decided to give value to the pomace of the white grapes used to create the Uis Blancis label. The dense aromas from the skins resulting from vinification are sublimated through a refined distillation process, which manages to enhance the rich and elegant profile of the grapes. The Acquavite di Vino Uis Blancis by Denis Montanar is born in an estate located in the province of Udine and produces a range of artisanal labels that faithfully reflect the terroir. Honest and genuine wines, made simply and with great respect for nature and the varietal characteristics of the grapes.The distillate is born from the precious pomace of Pinot Bianco, Sauvignon Blanc, Friulano, and Verduzzo from the fermentation of the wine Uis Blancis, which occurs spontaneously using only indigenous yeasts. The pomace, still fragrant and rich in aromas, is processed by a trusted company from South Tyrol, which carries out a double distillation in discontinuous stills heated in a water bath, allowing for remarkable finesse and expressive intensity. After a brief aging in stainless steel tanks, the distillate is reduced in alcohol content with pure water and then bottled for sale.
